Our nano-lots feature high quality coffees from innovative producers that are exceptional varietals or uniquely processed. You may remember our peach-macerated coffee from last summer and the koji fermented gesha from summer of 2023. This nano-lot comes from Finca El Paraiso also celebrates excellence in coffee.
This coffee was first anaerobically fermented for 36 hours before a second fermentation with a specific innoculant. Then the Thermal shock comes into play. The coffee was washed alternately with hot and cold water. This process locks in some flavors and stops the coffee from overfermenting.
Finca El Paraiso was founded in 2008 by brothers Diegor and Alexander Bermudez, Located in the Piendamo region of COlombia, they do incredible work in innovative coffee production.
