The Tolima Region of Colombia is known for its high altitude and great coffees. This is the central part of the country and the Colombian part of the Andes Mountains. We came across this coffee back in the summer months in a set of samples from Cofinet.

 

Often, the natural process is attempted by farmers who are trying to raise the score of a coffee by a point or two. In my opinion, this approach with a lower quality coffee to fermentation often contributes to an overly fermented winey coffee. This coffee, on the other hand, was clearly a great blend of local arabica beans that the producers wanted to ferment for its own value. It has notes of honey, raspberry and chocolate.
