Growing altitude: 4921 & 5200 feet above sea level

Origin: Finca Muxbal, Union Juares, Chiapas, Mexico &

Finca El Jardin, Fraijanes, Guatemala

This month we have a blend of a washed Mexican coffee and a natural

Guatemalan. These two coffees are both grown in volcanic soil hence the name Los Volcanes. Volcanic soil is great for coffee growing for many reasons including being rich in minerals and good for water drainage.

The Mexican washed is from Finca Muxbal. This farm is located close to the second highest mountain in central America, Volcan Tocana. This stratovolcano is the first in a line of volcanoes known as the Central American Volcanic Arc ranging from Mexico to Panama.

The Guatemalan Natural is from Finca El Jardin. Pablo and Eva's farm is near Volcan Pacaya. This active volcano is also in the same Volcanic Arc. Scott, Vanessa and I (Noah), were able to hike partway up this volcano last year with Pablo and Eva.

Thermal Shock!

Thermal Shock coffees are a new post harvest process, whereby the beans are exposed to non-ambient temperatures. These create different microbiomes for bacteria and fungi that affect the flavor of the coffee.

It’s great seeing this coffee coming to fruition. While intended for high yields at lower altitudes, Pablo and I discovered (there are probably others that know this too)  that the Anacafe-14 does very well at the higher altitude of the Finca el Jardin. This is a 300 lb micro lot, but there’s more of this specific variety on the way as their first large harvest of Anacafe-14 is currently being picked.

LIMITED RELEASE

Peach Summertime is a new release from Jairo Arcila. This is a "Peach Macerated" Coffee from Colombia. That means that after the coffee was harvested, it was fermented together with peach. The peach is very front. It's bright, fruity and this truly unique coffee releases great summer vibes.

Last week I bought Black River from the Regional Market. I have to say. It is absolutely the best black coffee I have ever had. I hope it’s a regular edition that is available all the time. It’s so good. I’m definitely telling everyone I know to get it. Really. Not to overstate it, I was blown away.
